I have 200 CVs. On MSC we serve 3000 guests, 1200 desserts per day. I don’t need an artist, I need a fast, clean, reliable pastry soldier who knows Italian classics.
SECTION A: PERSONAL – Will you survive 7 months?
Q1. Tell me about yourself?
What MSC Wants:Hotel experience, early mornings, volume.
Perfect Answer: “Good morning Chef, I am Pastry Chef from Kenya, 3 years in 5-star hotel pastry. I make bread, croissants, Danish, sponge, mousse, Italian classics like Tiramisu, Panna Cotta. I can work 12 hours, 4 AM start, produce 200 portions alone, work in hot galley. Ready for 8-month contract.”

*Q2. Why MSC Cruises? Why Pastry Demi Chef?*
*Perfect Answer:* “MSC is Italian company famous for best pizza and pastry at sea. I want to learn authentic Italian pastry and high-volume production. As Demi Chef I can lead the commis section and keep mise en place perfect.”
*Q3. Can you work 10-12 hours, no day off, share cabin with 2, work on rough sea?*
*Perfect Answer:* “Yes Chef. I am used to early mornings, standing long hours, hot pastry section 30C+. I am disciplined, clean, I respect shared cabin.”
SECTION B: SAFETY / USPH / HACCP – 70% FAIL HERE
*Q4. What is HACCP for pastry on MSC?*

*Perfect Answer:* “1. FIFO and label: product, date, time, expiry 72 hours for pastry. 2. Temperature: Cream, custard, mousse store at 0-4C, never in danger zone 5-63C more than 2 hours. 3. Separate raw eggs from ready-to-eat. 4. No bare hand touch — use gloves, tongs. 5. Wash hands every 30 mins. 6. Sanitize boards.”
*Q5. Temperatures for pastry storage?*
*Perfect Answer:* “Chiller 0-4C for all cream, custard, mousse, fresh fruit. Freezer -18C for frozen cakes, dough. Proofing 27-28C, 75% humidity. Chocolate temper 31C for dark, 29C white. Danger Zone 5-63C — cream cannot stay out >2 hours.”
*Q6. How do you handle eggs and cream safely?*
*Perfect Answer:* “Use pasteurized eggs only on ship per USPH. Store eggs at 0-4C, never at room temp. Cook custard to 82-84C to kill bacteria. Cool quickly from 63C to 4C in 4 hours — use blast chiller. Never reuse leftover cream.”

*Q7. You cut yourself, or you drop a cake on floor?*
*Perfect Answer:* “If cut: Stop, inform Chef, blue plaster + glove, sanitize area. If cake drops on floor: Discard immediately per USPH, no matter how expensive. Clean and sanitize floor. Log waste.”
*Q8. How do you avoid cross-contamination and allergens?*
*Perfect Answer:* “Separate allergens: nuts, gluten, eggs. Use clean boards, color-coded: Yellow for pastry, green for fruit. Label all with allergen list — Nuts, Dairy, Gluten. Store ready-to-eat on top, raw eggs bottom. Never use same spatula for nut and non-nut cake.”
SECTION C: TECHNICAL – ITALIAN PASTRY IS MSC DNA
*Q9. What Italian pastries does MSC make daily?*

*Q10. What is your daily routine as Pastry Demi Chef?*
*Perfect Answer:* “4 AM: Check thaw sheet, check production list from Executive Pastry Chef — how many desserts for buffet, MDR, specialty. Bake bread, croissants, Danish. Produce mise en place: sponge, pastry cream 82C, mousse. Portion 150g per dessert per spec. Decorate, store FIFO. Clean every 4 hours, check inventory for next day.”
*Q11. How do you make Panna Cotta and Tiramisu correctly?*
*Perfect Answer:*
“Panna Cotta: Heat cream, milk, sugar to 85C, add soaked gelatin, cool to 4C, set 4 hours.
Tiramisu: Make sabayon 82C with yolks/sugar, mix mascarpone, layer with espresso-soaked Savoiardi, dust cocoa. Store at 0-4C, use within 48 hours.”
*Q12. How do you handle bread and croissant on MSC?*
*Perfect Answer:* “Croissant: Laminate butter 3 single folds, rest at 4C, proof at 27C 75% humidity for 2 hours, bake 175C 18 mins. Bread: Mix, proof, bake at 220C with steam. On MSC we bake fresh 3 times daily for 3000 guests.”
*Q13. What is yield and portion control in pastry?*
*Perfect Answer:* “Yield: 1kg flour gives 40 croissants. Portion control: Every dessert 120-150g same weight, using scoop or scale. Important to control food cost and give every guest same experience. Trim reuse for trifle.”
*Q14. You have 1000 portions to do in 2 hours, how do you manage?*
*Perfect Answer:* “Mise en place first, organize team of 3 commis, batch production — one makes sponge, one makes cream, one plates. Use piping bags, speed, but keep quality and FIFO. Inform Chef if behind.”
